Easy Chicken, Potatoes, and Salad

Potatoes

Ingredients:

2 lbs red potatoes cut into quarters
2 Tbsp Ultra Premium Olive Oil
1.5 Tbsp Metropolitan Chef Spice Rub

Directions:

1.Preheat oven to 450 degrees F (250 degrees C).
2.Place potatoes in a large roasting pan and toss with Olive Oil + Metropolitan Chef Spice Rub( Garlic Lovers, Veggie Lovers, Rosemary) until evenly coated.
3.Spread out potatoes in a single layer.
4.Bake in preheated oven for 20 minutes, stirring occasionally. Serve immediately.

Chicken

Ingredients:

4 Boneless Chicken Breasts
Salt and Pepper
1.5 Tbsp Metropolitan Chef Spice Rub
2 Tbsp Ultra Premium Olive Oil
1/4 cup your favourite white balsamic vinegar or try Champagne vinegar.
4 Tbsp cold butter cut into small pieces

Directions:

1.Season chicken on both sides with salt and pepper.
2.Heat olive oil in a heavy skillet over medium-high heat until it starts to shimmer.
3.Place chicken breasts in skillet skin side down. Sprinkle 1.5 Tbsp of Metropolitan Chef Spice Rub. Do not disturb the breasts until the skin side sears, 5 or 6 minutes. |
4.Turn chicken.
Cook until internal temperature reaches 150 degrees F, about 5 minutes.
5. Add vinegar and butter to pan with chicken. Shake pan gently until butter melts and internal temperature of chicken reaches 160 to 165 degrees F, 2 to 3 minutes more.
** Add a splash of chicken broth or water to thin the sauce if needed.

Salad

Ingredients:

Mixed lettuce leaves
3/4 cup fresh flat leaf parsley
1 red apple cut into matchsticks
2 Tbsp lemon juice
1 Tbsp Ultra Premium Olive Oil
salt and pepper

Directions:

1. Put lettuce, parsley, and apple into a bowl
2. whisk lemon juice, olive oil, and salt and pepper
3. Drizzle over the salad and toss gently
